The cultivars
Two distinct expressions of matcha, shaped by cultivar and origin. Saemidori from Uji is smooth, sweet and rich in umami, with a clean finish. Okumidori from Yame is deeper and more structured, with nutty notes, rich umami and a structured finish. Both are first-flush, shade-grown and stone-milled in Japan.

Sourcing
Color, sweetness and smoothness are decided long before the tea reaches your whisk.
The tea is covered for 20-25 days before picking. Less sun means more chlorophyll and amino acids. A brighter green and deeper umami
Only the spring’s first harvest, when the youngest leaves are at their sweetest and most tender.
The newest leaves are picked by hand, then steamed and dried into tencha, the leaf that becomes matcha.
Stone mills grind the tencha slowly into a fine, silky powder, so the tea doesn’t overheat and keeps its color and aroma.

Get directionsA cultivar is a specific variety of the tea plant, bred for particular traits. Like grape varieties in wine, each cultivar gives matcha its own color, sweetness and depth. We sell single-cultivar matcha rather than blends, so each bag is one plant from one region.

Saemidori from Uji is silky and naturally sweet, with delicate vegetal notes and a clean finish. Okumidori from Yame is smoother and fuller-bodied, with roasted, nutty notes and deep umami. If you’re not sure, order 30 g of each and try them in your own drinks.
At about 2 g per drink, 500 g makes around 250 drinks and 1 kg around 500. A café selling 20 matcha drinks a day uses roughly 1.2 kg a month.

Keep it sealed in a cool, dark place away from heat, light and moisture. Once opened, refrigerate it in an airtight container and use it within a few weeks for the best color and flavor. Let it reach room temperature before opening to avoid condensation.
Sift about 2 g (1 teaspoon) of matcha into a bowl, add 30 ml of water at around 80°C (175°F) and whisk in a quick zigzag until smooth and frothy. Pour it over 180 ml of steamed or cold milk and sweeten to taste.
Yes. Both matchas are pure stone-ground green tea with nothing added, and they are gluten-free.
